Aloo Capsicum Sabzi is a delightful and easy-to-make Indian dish that combines the earthy flavors of potatoes and the crunchy sweetness of bell peppers. It’s a versatile side dish that pairs perfectly with roti, paratha, or rice, making it a favorite in many Indian households.

Ingredients

  • 2 medium -sized potatoes, peeled and cubed

  • 3 medium -sized capsicums (bell peppers), cut into ½ inch chunks

  • 1 large onion, thinly sliced along the length

  • 1 green chili, slit and deseeded

  • 1 teaspoon cumin seeds

  • 1 teaspoon mustard seeds

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust as per taste)

  • 1 teaspoon coriander powder

  • 1/2 teaspoon garam masala (optional)

  • 1/2 teaspoon salt

  • 2 tablespoons oil

  • Fresh coriander leaves, chopped (for garnish)

Instructions

  • Heat Oil: In a large pan or kadai, heat the oil over medium heat. Add the cumin seeds and mustard seeds. Let them splutter.
  • Add Vegetables: Add the cubed potatoes and mix well. Cook for about 5 minutes to soften the potatoes. Then, add the sliced capsicum, finely chopped onions, and green chilies. Sauté all ingredients on high flame for about 5 minutes. Cover the pan, reduce the flame to low, and cook for about 10 minutes, stirring occasionally.
  • Add Spices: Add salt, turmeric powder, red chili powder, coriander powder, and garam masala. Cook for another 2-3 minutes on low flame.
  • Garnish and Serve: Garnish with freshly chopped coriander leaves and serve hot with roti, paratha, or rice.

Notes

  • Note: Cooking the potatoes in oil first helps reduce their stickiness. If added later, the potatoes may turn mushy. For a tangy flavor, you can add one thinly sliced tomato just before adding the spices.
