Ingredients

  • 1 large eggplant (baingan)

  • 2 tablespoons oil

  • 1 large onion, finely chopped

  • 1 tomato, finely chopped

  • 2 garlic cloves, minced

  • 1 -inch piece of ginger, minced

  • 1 or 2 green chilies, finely chopped (adjust according to taste)

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder

  • 1 teaspoon garam masala (optional, I do not use)

  • 1 teaspoon salt (adjust to your taste, I use half a spoon)

  • Fresh coriander leaves, chopped for garnish

Instructions
