Ingredients

  • 1 kg carrots (grated)

  • 1 liter full cream milk

  • 1 cup sugar (around 200 gms, adjust to taste)

  • 4 tablespoons ghee (clarified butter)

  • 10 cashew nuts (broken into pieces)

  • 10 almonds (sliced)

  • 5 cardamom pods (crushed)

  • A pinch of saffron (optional)

  • 1/2 teaspoon cardamom powder

Instructions

  • Prep the Carrots: Wash, peel, and grate the carrots using a grater.Washed and peeled GajarGrated Gajar
  • Cook the Carrots: In a heavy-bottomed pan, add the grated carrots and milk. Cook on medium heat, stirring occasionally, until the milk comes to a boil. Reduce the heat to low and let it simmer. Keep stirring frequently to prevent the mixture from sticking to the bottom of the pan. Continue this process until the milk has completely evaporated and the carrots are cooked. This may take around 45 minutes to 1 hour.Add grated gajar and milk to a heavy bottomed pan
  • Add Sugar and Cook: Once the milk has evaporated, add sugar to the cooked carrots. Mix well and cook on medium heat, stirring continuously. The mixture will become a bit liquidy due to the sugar, but continue to cook until the liquid evaporates.Add sugar to the mixture
  • Flavor with Cardamom: Add the crushed cardamom pods, cardamom powder, and saffron (if using). Mix well and cook for another 2-3 minutes until everything is well incorporated.Flavor with cardamom and saffron
  • Add Ghee and Nuts: In a separate small pan, heat the ghee. Add the broken cashew nuts and almonds, and fry until they turn golden brown. Keep aside some of the mixture for decorating on the top after plating. Pour the rest of the mixture over the cooked carrots. Mix well and continue to cook for another 5-10 minutes.
  • Serve: Once done, turn off the heat. Your Gajar Halwa is ready to be served. You can serve it hot or chilled, garnished with extra nuts if desired.

Notes

  • Do not add sugar to the carrot and milk mixture until the milk evaporates. Adding sugar prematurely can cause the milk to curdle.
