Ingredients

  • 250 grams bhindi (okra), washed, dried, and cut into 1-inch pieces

  • 1 cup yogurt

  • 2 tablespoons oil

  • 1 teaspoon cumin seeds

  • 1 large onion, finely chopped

  • 1 green chilli, chopped

  • 2 red chilies, each broken into two pieces

  • 1 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon asafoetida (hing) powder

  • Salt, to taste

  • Fresh coriander leaves, chopped for garnish

Instructions

  • Prepare the Bhindi: Heat 1 tablespoon of oil in a pan over medium heat. Add the bhindi and sauté until it’s cooked and slightly crispy. Remove from the pan and set aside.
  • Prepare the Masala Base: In the same pan, heat the remaining oil Add the cumin seeds and let them splutter. Add the asafoetida powder. Add the chopped onion and green chili and sauté until golden brown. Add the turmeric powder, coriander powder, red chili powder, and salt. Cook the masala until it releases oil.Ingredients for making Dahi Bhindi
  • Combine Bhindi and Yogurt: Beat the yogurt coarsely (not smooth). Add the bhindi and the masala base to the yogurt. Mix thoroughly.
  • Garnish and Serve: Garnish with chopped coriander leaves. Serve warm/cold with roti, paratha, or rice.

Notes

  • Note: Do not blend the curd in a mixer. Beat it coarsely to maintain the desired consistency. The mixture should not be heated and is meant to be served warm or cold.
