Ingredients

  • Vegetables
  • 1 cup

  • 1 cup Sweet Pumpkin (cut lengthwise)
    1 cup White Pumpkin (cut lengthwise)
    1 Drumstick (cut lengthwise)
    2 Carrots (cut lengthwise)
    10 Green Beans (cut lengthwise)
    1 Raw Banana (peeled and cut lengthwise)
    2 Potatoes (peeled and cut lengthwise)
    1/2 teaspoon Turmeric Powder
    Salt to taste

  • Coconut Paste
  • 1 1/2 cups Fresh Coconut (grated)
    3 Green Chilies
    1 sprig Curry Leaves
    1 teaspoon Cumin Seeds
    1 tablespoon Coconut Oil
    1 cup Yogurt (whipped)

Directions

  • Cook the Vegetables: In a large pot, add the vegetables, turmeric powder, salt, and enough water to cover them. Cook until the vegetables are tender but not mushy.
  • Make the Coconut Paste: Grind the grated coconut, green chilies, and cumin seeds into a coarse paste using a little water.
  • Combine and Cook: Add the coconut paste to the cooked vegetables and mix well. Let it simmer for a few minutes until the flavors meld together.
  • Finish with Yogurt and Coconut Oil: Stir in the whipped yogurt and cook for another minute. Turn off the heat and drizzle with coconut oil. Garnish with fresh curry leaves.
  • Prepare the Vegetables: Wash and cut all the vegetables into uniform, lengthwise pieces.

  • Serving Suggestions: Serve this delicious avial with steamed rice, sambar, and papad for a wholesome and satisfying meal. Enjoy the burst of flavors and the creamy texture that makes this dish a favorite in Tamil households.

Notes

  • Do not overcook the vegetables.
